Smoked Guinness Corned Beef Brisket

This recipe is a variation on our Smoked Corned Beef For St. Patrick’s Day recipe originally published on 11 Mar 2015. This is the updated version with a Guinness kick to make it even more flavorful and festive.
There are a lot of great ways to celebrate St. Patrick’s Day, and smoked corned beef just happens to be one of our favorites. Put away that slow-cooker and pull out your favorite PK Grill & Smoker for a great smoked corned beef recipe that will leave you wondering why you never did this before.
Ingredients:
- Corned beef brisket (choose the flat portion for better slicing)
- 2-3 cans of Guinness – we like stout, but if you prefer draught, go ahead and do you
- Salt to taste
- Black Pepper to taste
- Granulated garlic or other garlic seasoning to taste
- Potatoes
- Onions
- Carrots
Instructions:
- Rinse the corned beef brisket under cool water, remove surface brine and pat dry
- Season with salt, black pepper and garlic on all sides and set aside for 30 minutes
- While seasonings set in, prepare your PK Grill & Smoker for two-zone cooking with a drip pan or pot containing about ½ inch of water underneath the indirect side to catch the drippings
- Let your PK heat to about 250 degrees
- When your PK is ready, smoke the corned beef brisket for 1-2 hours
- Remove the meat and and the drippings from the grill and place them into a large pot, dutch oven, or roasting pan
- Pour the Guinness around (not over) the meat and place it back on the grill
- Once the meat has reached 160 degrees internal temperature, remove it and cover the pot with tin foil, place back on the grill, and smoke for another 1.5 hours
- While the corned beef is smoking, prepare your vegetables: potatoes, onions and whole baby carrots
- Once the corned beef has smoked for about 3.5 hours, it’s time to add the chopped vegetables
- Once vegetables are added, re-cover the pan and cook until it reaches 195 degrees internal temperature
- Remove from grill and let it sit for at least 15 minutes before serving
