Cajun Corn Beef

Ingredients:
- 1 chuck roast
- 2 med.onions
- head of garlic
- sweet bellpepper
- 2 cups of water
- pack of au-jus seasoning
- 2 cans of niblets sweet corn
Rub down roast with cajun seasoning, sear over hot fire, in a aluminum pan add all ingredients minus corn then add roast and cover tight with foil,place on pk and let cook for 1 hour with lid down on pk, after about an hour add corn and may need more water, re-cover and let cook about another hour, slit foil during last half hour, enjoy the best roast ever and the corn is super
